Pac Choi, also known as Bok Choy, is a type of Asian green closely related to Napa cabbage. It has a mild flavor and crunchy, juicy texture. We grow a true baby bok choy, but you may also see some full-size chois come into our rotation.
How to use it:
Stir fried with lots of other veggies and served over rice or noodles
Cooked lightly into soups, especially broth-based ones with miso or beef
Lactofermented in kimchi, replacing the traditional cabbage
